Crockpot Cheeseburgers

*These have about 15 minutes of prep and 3-4 hours cooktime in the crockpot, so you will have to cook this on a day off or weekend :)


1 lb ground sirloin
1/2 lb ground chuck
1 medium onion(diced)
3 cloves garlic(minced)
1/2 cup relish
1 tsp montreal steak seasoning
1 tsp seasoned salt
1/8 cup ketchup
1 tsp yellow mustard
5 oz velveeta cheese(cubed)
1/2 cup water

-Season your meat with seasoned salt and cook with your onion and garlic over medium heat on stove until browned.  Drain liquid and pour meat mixture into slow cooker.  Add your condiments and water.  Put on low for 3-4 hours checking occasionally and giving a little stir...Also taste and adjust as you go through.  I added a little xtra condiments.  The last half hour of cooking time put your cubed velveeta on top.  Serve as soon as the cheese is melted.  Serve with some hamburger buns...I also put some sliced tomatoes on mine...Enjoy!

Panko Parmesan Fish Nuggets

* I am absolutely awful with measuring ingredients while I'm cooking so please bear with me until I start tweaking my recipes more...:)

1.5 lbs of your choice of fish( I would recommend cod or another whitefish)
    *This amount of fish fed four adults, so you can change the amount to feed your size family :)
Panko bread crumbs
2-3 eggs
1 TBSP of milk
Flour
1/2 cup grated parmesan cheese
Parsley & Garlic Powder


Preheat oven to 375.  Cut your fish fillets into sticks, about 2-3 inches long. Season with salt and pepper. 
Set up your breading station.  You will need three different plates.  1st is flour, 2nd will be your eggs and milk mixed together, 3rd will be your Panko(I didn't measure it, but make sure you cover the entire plate)...Mix the Panko with your parmesan cheese and season with parsley, garlic powder and s&P....

Coat each stick with flour first, egg mixture, then Panko and place them on a greased sheet.  Cook for about 15-20, flipping them over half way to brown both sides :)

Easy Crockpot Chicken Tacos

4 boneless chicken breasts
1 jar mild or hot Pace Salsa
Mexican shredded cheese
Cumin
S & P

Spray crockpot with non stick spray.  Place chicken breasts in crockpot.  Season with salt, pepper, cumin. Pour jar of salsa in the pot.  Turn on low for 6-8 hours or high for 4 hours.  Before serving sprinkle some cheese on top.

You can set up a little taco station with tortillas, sour cream, chunks of avocado, cheese, etc..
